I made this for Eoin and he loved it, the only thing is I would reduce the pasta as you end up with 2 large portions. Probably big enough for an adult. The cheese gives the pasta a lovely texture. I made it with carrots, brocolli, corgettes and peas.
75g (3oz) pasta shapes 50g (2oz) carrots, peeled and diced* 50g (2oz) corgettes, washed and diced* 50g (2oz) brocolli florets, diced* 25g (1oz) unsalted butter 25g (1oz) cheddar cheese, grated
Put the pasta in a saucepan together with the carrots, cover generously with boiling water and cook for 5 mins. Add the broccoli and corgettes and continue to cook for a further 7 mins. Then drain. Melt the butter in a saucepan, stir in the drained pasta and vegetables and toss with the butter and cheddar cheese until the cheese has melted.
* can use sweetcorn, peas, or diced tomatoes as alternatives.
